  • 3 lb Whole chicken breasts
  •     Salt
  • 1/4 c. Light vegetable oil
  • 2 c. Minced Vidalia onions
  • 3/4 c. Walnuts, lightly toasted
  • 1/4 c. Finely minced scallions
  • 3/4 c. Finely minced cilantro
  • 1 1/3 c. Homemade mayonnaise
  •     Fresh grnd black peppe

Directions

  1. Place the chicken breasts in a saucepan with sufficient water to cover.
  2. Bring to a boil, add in 1/2 tsp. salt, reduce the heat, and simmer till the chicken is cooked through, about 15 min. Drain the chicken and allow to cold.
  3. Remove and throw away the skin. Remove the chicken from the bones and tear the meat into shreds. Place in a salad bowl and set aside.
  4. Heat the oil in a medium-size skillet over medium-high heat. Saute/fry the onions, stirring, till deep golden, about 20 min. Drain the onions and add in them to the chicken. Cold to room temperature.
  5. Add in the walnuts, scallions, and cilantro to the chicken. Toss with the mayonnaise and season with salt and pepper. Serve the salad at room temperature.
