Tea time snack...It's very addictive.
The sev are basically fried noodles made from gram flour. Sev (noodles) are shaped with Seviya machine, a unique brass utensil equipped with different interchangeable disks. A fine-holed disk is attached to the container and filled with dough, which is then pressed into hot oil where it fries into crisp noodles.Here I've used 3 different disks to make thin & thick Sev and Papri(crispy thin strips).

Ingredients

  • 2 cup besan (Bengal gram flour)
  • 1/2 tsp Ajwain (carom seeds)
  • 1 tsp red chillies powder
  • 1 tsp salt
  • 1 1/2 tbsp hot oil
  • 3 fl.oz. water
  • oil for deep-frying

Directions

  1. Sieve the gram flour into a bowl and add ajwain,chilli powder and salt.
  2. Dribble in hot oil and then gradually add water.
  3. Mix to a stiff paste (Do not be tempted to add more water this is meant to be a stiff paste)
  4. Heat the oil over a medium flame ( test it with a small bit of dough first).
  5. Fill the seviya machine with a portion of dough.
  6. Holding the utensil over the hot oil, force the mixture through the holes by turning the handle.
  7. As soon as noodles fall, slowly move the machine in a circular motion so that they do not stick together.
  8. Fry both sides until crisp and lightly browned.
  9. Remove and drain on a paper towel.Store in an air-tight container.
  10. Serve sev as a snack.
