  • 1 Tbsp. Butter
  • 8 ounce Mushrooms trimmed, and
  •     caps only sliced
  • 1/4 tsp Grnd orange zest
  • 1/2 c. Minced canned plum tomatoes
  • 1/4 c. White wine
  • 1/2 x recipe Blueprint For Veal Stew see * Note
  • 1/2 c. Pitted sliced green olives
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. In a saucepan saute/fry the mushrooms in butter till soft. Add in the orange zest and tomatoes and white wine. Reduce till thickened. Add in the veal stew and bring to a simmer. Add in olives and season to taste with salt and pepper.
