Seared Tuna with White Beans Recipe

Ingredients

  • 2 tablespoons Extra Virgin Olive Oil
  • 5 large garlic cloves, minced
  • 1/2 large onion, chopped
  • 4 celery ribs, chopped
  • 1 large pinch red pepper flakes
  • salt and black pepper
  • 4- 6 ounce tuna steaks about 1 1/2 inches thick (or 1 for each person)
  • 1/4 cup white wine vinegar
  • 1 1/4 cups low sodium chicken stock
  • 1 bag dried white beans (cooked) or 2 (14) ounce cans
  • 1 14 ounce can diced tomatoes, drained
  • 5 to 6 button mushrooms, chopped or sliced
  • 1/2 cup fresh parsley
  • juice of 1/2 lemon
  • whole grains
