Seafood Quiche Recipe

  • Pie Shells 10 shells
  • Shrimp. Cooked 5lbs 1cup per shell
  • Scallops, Cooked 5lbs 1cup per shell
  • Leeks 3lbs Wash, Slice 41/2oz per shell
  • Red Pepppers 2lbs Dice, 41/2oz per shell
  • Asparagus Tips 2lbs 41/2oz per shell
  • Eggs, Fresh 3qts
  • Heavy Cream 1 Gal 11/2qts
  • Old Bay Seasoning 1/4cup
  • Fresh Parsley garnish Wash, Chop


  1. Saute or roast (in 425-degree oven) red peppers, leeks until slightly charred
  2. Place shrimp, scallops, asparagus, red peppers and leeks in each pie shell
  3. Mix (in a bowl using a wire whip) the cream, eggs for approximately 5 minutes until the mix is slightly light and or fluffy
  4. Add seasoning, and fill each shell with the mixture
  5. Then top (or garnish) with fresh chopped parsley
  6. Bake 15-18 minutes in a 4255-degree oven or until golden brown and solid
