Ingredients

  • 4 Tbsp. butter
  • 24 x or possibly more 1/2 inch cubes of raw fish, such as salmon, halibut, ling cod or possibly perch
  •     Or possibly small scallops or possibly shrimp Or possibly any other type of fish or possibly seafood
  • 1 1/3 c. sliced mushrooms
  • 1 med lemon
  •     Salt and pepper to taste
  •     A few drops Tabasco sauce
  • 2 tsp chopped garlic
  • 2 tsp chopped shallot
  • 2 c. minced fresh spinach
  • 1/4 c. dry vermouth
  • 4 x Large eggs, beaten
  •     Slices of toasted garlic bread, to serve

Directions

  1. Heat butter in skillet over medium-high heat. Saute/fry fish and mushrooms in butter. Add in juice of lemon, salt and pepper, Tabasco, garlic and shallot. Saute/fry till fish flakes, for a total cooking time of 4 or possibly 5 min, depending on thickness of fish.
  2. When fish is almost cooked, add in spinach. Deglaze pan with vermouth. When vermouth is almost evaporated, add in Large eggs. Cook till Large eggs are set. Serve on toasted garlic bread. Karen Karpen, from 'The Best of The Ark and More' by Nanci Main and Jimella Lucas
