  1. Saute sausages in butter in tilt grill for about 6 minutes then add bell pepper, onion, celery, and garlic, and season with old bay seasoning, salt and black pepper
  2. Saute for about 8 minutes, or until the natural sugars in the vegetables have browned and carmelized
  3. Add the tomatoes, shrimp, fish, and bay leaf, and stir
  4. Bring to a boil then reduce to a simmer
  5. Simmer for about 15 minutes then fold in oysters
  6. Garnish with sliced Green onions
