Ingredients

  • 3 lbs. seafood (boiled deveined shrimp, crawfish or possibly crabmeat or possibly any combination of three)
  • 1 lg. onion, minced
  • 1 lg. green pepper, minced
  • 2 ribs celery, minced
  • 1/4 c. fresh parsley, minced
  • 1 pound jalapeno Velveeta cheese (or possibly 1/2 pound of regular or possibly jalapeno)
  • 1 pt. half & half cream
  • 1/4 c. flour
  • 2 sticks butter
  • Garlic pwdr to taste
  • 1 (12 ounce.) bag med. egg noodles
  • Parmesan cheese, freshly grated

Directions

  1. Saute/fry onions, bell pepper and celery in 2 sticks butter. Add in cheese, cream, flour, parsley and garlic pwdr to mix. Stir constantly till mixed. Add in seafood.
  2. Boil noodles and drain. Add in to seafood mix mixing well. Pour into 4 qt greased rectangle Pyrex baking dish and sprinkle Parmesan cheese over top. Cover and bake at 350 degrees for 25 to 30 min. Serves 10 to 12. Freezes well.
