Ingredients

  • 1 (9 inch) partially baked pie shell
  • 1/4 pound seafood
  • 2 tbsp. onion, diced
  • 2 tbsp. butter
  • 1/2 teaspoon salt
  • Dash of pepper
  • 1/2 c. grated Swiss cheese
  • 1/4 c. grated Cheddar cheese
  • 4 Large eggs, beaten
  • 1 (3 ounce.) can B & B mushrooms, drain and reserve broth
  • 3/4 c. light cream

Directions

  1. Cold pie shell. Saute/fry onion in butter. Add in all but 10 slices mushrooms. Continue to saute/fry till warm. Combine Large eggs, cream, mushroom broth and seasonings. Add in seafood.
  2. Pour into cooled pie shell. Sprinkle with grated cheese. Bake 35 min at 375 degrees. After 20 min, top with last 10 slices of mushrooms.
  3. It is done when it looks puffed and golden. Let stand before cutting. Serves 4 to 5 people nicely.
