Scrambled Mexican Tofu Recipe

Ingredients

  • 3 c. egg whites
  • 3 Tbsp. soy sauce
  • 1/4 tsp grnd black pepper
  • 1/2 c. onion diced
  • 2 Tbsp. green chile roasted, minced
  • 6 Tbsp. fresh chives minced
  •     or possibly fresh cilantro, minced
  • 1/2 lb tofu soft
  • 1 tsp turmeric
  • 1 x fresh tomato peeled, seeded and
  •     diced
  • 2 x garlic cloves chopped
  • 1/8 tsp grnd cumin

Directions

  1. In a small bowl, beat the egg whites till broken up and just beginning to
  2. foam. Crumble the tofu finely and add in to the egg mix. Add in the soy sauce, turmeric and pepper. Set aside.
  3. In a large nonstick skillet over medium heat, cook the tomato, onions, garlic, chili and cumin till the onion is translucent/soft and all the liquid has evaporated.
  4. Add in the egg whites and tofu mix. Stir well with a wooden spoon and scramble over medium heat till the egg whites are cooked.
  5. Toss in chives or possibly cilantro.
