Ingredients
- 6 ounces bacon, cut into pieces
- 3/4 cup heavy cream (I know, I know....its almost gone)
- 1 large garlic clove, finely chopped
- 1/4 teaspoon dried crushed red pepper
- 2 tablespoons olive oil
- 1 pound asparagus, chopped
- 1 pound bucatini

%20cooks%20the%20egg.%20%20It%20still%20makes%20me%20queasy.%20%20However,%20it%20was%20inevitable%20that%20I%20would%20be%20making%20it%20in%20my%20life%20because%20it%20was%20one%20dish%20that%20Grumpy%20consistently%20orders%20out.%3C/p%3E%3Cp%3EWhen%20my%20parents%20were%20here%20last%20weekend,%20we%20took%20them%20over%20to%20the%20Fresh%20Market%20in%20Latham.%20%20I%20knew%20that%20they%20would%20love%20the%20place%20and%20as%20long%20as%20mom%20felt%20up%20to%20going,%20we%20wanted%20to%20show%20it%20to%20them.%20%20While%20browsing%20around%20I%20finally%20came%20across%20the%20buccatini%20pasta%20that%20I%20had%20been%20looking%20for.%20%20I%20snatched%20the%20package%20right%20up.%20%20It%20could%20have%20cost%20me%20$10%20for%20all%20I%20cared,%20I%20wanted%20to%20try%20that%20pasta!%20%20(it%20wasn't%20that%20much%20by%20the%20way).%20%20I%20immediately%20started%20thinking%20what%20I%20was%20going%20to%20make%20with%20it.%20%20I%20really%20wanted%20to%20try%20a%20BLT%20Spaghetti%20that%20Rachel%20Ray%20made%20on%20her%20show%20recently.%20%20I%20loved%20how%20she%20dropped%20the%20pasta%20in%20the%20pesto%20and%20coated%20it.%20%20Yum!%20%20However,%20I%20knew%20Grumpy%20probably%20wouldn't%20be%20as%20happy%20with%20that%20meal%20as%20he%20would%20if%20I%20made%20a%20seafood%20pasta%20one.%20%20So,%20I%20started%20looking%20for%20Carbonara%20recipes.%20%20I%20found%20a%20recipe%20for%20Buccatini%20Carbonara%20with%20Zucchini%20on%20Epicurious.%20%20I%20decided%20I%20would%20go%20with%20the%20basics%20of%20that%20recipe%20and%20fix%20it%20up%20the%20way%20Grumpy%20would%20like%20with%20bay%20scallops%20and%20asparagus%20in%20place%20of%20the%20zucchini.%20%20While%20I%20think%20it%20tasted%20good,%20I%20still%20couldn't%20eat%20a%20lot%20of%20it%20because%20all%20I%20thought%20I%20could%20taste%20was%20egg%20yolk.%20%20Yeah,%20its%20probably%20all%20in%20my%20head,%20but%20that%20is%20how%20it%20is.%20%20Grumpy%20told%20me%20to%20%22suck%20it%20up%20and%20eat%20it%22,%20but%20I%20just%20couldn't%20eat%20much%20because%20my%20tummy%20kept%20doing%20hurdles%20on%20me.%20%20However,%20Grumpy%20said%20it%20had%20good%20flavor,%20that%20I%20cooked%20the%20scallops%20perfectly%20but%20that%20he%20thought%20it%20could%20have%20used%20more%20sauce.%20%20I%20actually%20made%201-1/2%20of%20the%20sauce%20recipe.%20%20I%20guess%20if%20I%20made%20it%20again%20I%20would%20need%20to%20double%20it%20instead.%20%20So,%20if%20your%20not%20afraid%20of%20egg%20yolks%20and%20loveCarbonara,%20I%20guess%20this%20is%20a%20good%20recipe%20for%20you.%20%20Hope%20you%20will%20enjoy!%3C/p%3E%3Cp%3EOh,%20and%20by%20the%20way,%20I%20love%20the%20buccatini%20pasta!%20%20I%20have%20half%20the%20package%20left%20and%20will%20definitely%20be%20making%20a%20dish%20for%20me%20with%20the%20remainder!%3C/p%3E%3Cp%3EYour%20Name%3C/p%3E%3Cp%3EYour%20Blog%20Name/URL%3C/p%3E%3Cp%3EYour%20Post%20URL%3C/p%3E%3Cp%3EAttach%20a%20photo%20(maximum%20width%20400px)%3C/p%3E%3Cp%3EYou%20should%20receive%20a%20confirmation%20from%20me%20that%20I%20have%20received%20your%20post.%20%20If%20you%20don't,%20then%20you%20may%20want%20to%20resend%20it.%3C/p%3E%3Cp%3EScallop%20Carbonara%20with%20Asparagus%3C/p%3E%3Cp%3Eadapted%20slightly%20from%20Epicurious%3C/p%3E%3Cp%3ECook%20bacon%20in%20medium%20skillet%20over%20medium%20heat%20until%20brown,%20stirring%20often.%20Using%20slotted%20spoon,%20transfer%20bacon%20to%20paper%20towels;%20drain.%20Pour%20off%20all%20but%202%20tablespoons%20drippings%20from%20skillet.%20Add%20cream,%20garlic,%20and%20crushed%20pepper%20to%20drippings%20in%20skillet;%20bring%20to%20boil.%20Set%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20in%20heavy%20large%20skillet%20over%20medium-high%20heat.%20Add%20scallops%20and%20cook%20until%20they%20just%20turn%20opague.%20%20Remove%20from%20skillet.%20%20Add%20asparagus%20and%20saute%20until%20tender,%20stirring%20occasionally,%20about%202-3%20minutes.%20Transfer%20to%20large%20plate.%20Season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EAdd%20sauce%20to%20pasta%20and%20toss%20over%20medium%20heat%20until%20sauce%20coats%20pasta%20(do%20not%20boil).%3C/p%3E%3Cp%3EAdd%20bacon%20and%20asparagus%20and%20toss%20to%20heat%20through.%20%20%20Serve%20with%20remaining%20cheese.%3C/p%3E%3Cp%3ECook%20pasta%20in%20large%20pot%20of%20boiling%20salted%20water%20until%20al%20dente%20according%20to%20package%20directions.%20Drain%20well%20and%20return%20pasta%20to%20pot.%3C/p%3E%3Cp%3EMeanwhile,%20place%20eggs%20in%20their%20shell%20in%20small%20bowl.%20Add%20enough%20hot%20water%20to%20cover.%20Let%20stand%205%20minutes.%20Crack%20eggs%20into%20large%20bowl%20and%20whisk%20to%20blend.%20Bring%20cream%20mixture%20to%20boil%20in%20skillet.%20Gradually%20whisk%20hot%20cream%20mixture%20into%20eggs.%20Mix%20in%201/2%20cup%20Parmesan%20cheese.%3C/p%3E){kind=link}
