Ingredients

  • 2 can Golden brown mushroom soup
  • 1 1/2 lb Grnd beef
  • 1/2 c. Dry bread crumbs
  • 1/4 c. Onion, finely minced
  • 1 Tbsp. Worcestershire sauce
  • 1/8 tsp Pepper
  • 1 x Egg, beaten
  • 6 med Potatoes, quartered
  • 6 med Carrots, cut into 2 inch
  • 3/4 c. Water

Directions

  1. In a large bowl mix 1/2 c. soup, grnd beef, bread crumbs, onion, worcestershire sauce, pepper and egg.
  2. In a 3 quart oblong baking dish, firmly shape meat into an 8X4 inch loaf.
  3. Arrrange potatoes and carrots around loaf
  4. Bake at 375 degrees for 45 min; spoon off fat.
  5. Meanwhile in a small bowl, combine remaining soup and water. Pour soup mix over vegetables and meat loaf.
  6. Bake for 30 min longer till meat load is no longer pink.
  7. To serve arrange with vegetables on platter, spoon some sauce over meat loaf; pass remaining sauce.
