- 1 cup whole wheat flour
- 1/2 cup white whole wheat flour (or you can use all purpose)
- 2 Tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup soy milk (plain)
- 2 eggs (I happened to have the 'good' kind so I made it easy on myself)
- 2 Tablespoons vegetable oil
- 1/2 green garlic stalk, chopped fine
- 3-4 shitake mushrooms, chopped fine

%3C/p%3E%3Cp%3ENoodle%20wanted%20'breakfast%20for%20dinner'%20because%20he%20was%20'so%20so%20hungry'.%20Who%20am%20I%20to%20deny%20such%20a%20sweet%20child%20his%20request?%3C/p%3E%3Cp%3EI,%20however,%20had%20grab%20bag%20night%20on%20my%20hands%20and,%20not%20wanting%20to%20disappoint,%20I%20make%20him%20pancakes%20and%20set%20off%20on%20my%20grab%20bag%20adventure.%20But%20what%20to%20do%20with%20the%20left%20over%20pancake%20mix?%20Ah%20ha!%20(lightbulb)%20make%20a%20savory%20pancake%20to%20go%20with%20my%20soup%20concoction.%3C/p%3E%3Cp%3EThis%20is%20so%20easy%20it's%20ridiculous.%20I%20actually%20feel%20a%20teensy%20bit%20bad%20posting%20it%20but%20I%20would%20never%20deny%20you%20the%20deliciousness%20of%20these%20savory%20pancakes!%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EOR%20you%20could%20make%20it%20really%20easy%20on%20yourself%20and%20go%20to%20Trader%20Joe's%20and%20pick%20up%20their%20gluten%20free%20pancake%20mix.%20It's%20super%20easy%20and%20delicious!%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EIn%20a%20bowl,%20mix%20all%20dry%20ingredients.%20Slowly%20add%20the%20milk%20while%20mixing,%20then%20add%20the%20eggs%20and%20vegetable%20oil.%20Mix%20well.%20Add%20up%20to%201/4%20cup%20more%20milk%20if%20it's%20too%20thick.%3C/p%3E%3Cp%3EAdd%20the%20green%20garlic%20and%20shitake%20mushrooms%20and%20mix%20to%20incorporate.%3C/p%3E%3Cp%3EHeat%20a%20skillet%20or%20pan%20and%20add%20some%20Earth%20Balance.%20When%20pan%20is%20hot%20and%20Earth%20Balance%20is%20melted,%20pour%20about%201/4%20cup%20of%20the%20batter%20(for%201%20pancake)%20on%20the%20pan.%20I%20was%20able%20to%20get%20four%20pancakes%20at%20a%20time%20on%20my%20flat%20pan.%3C/p%3E%3Cp%3ELet%20cook%20on%20one%20side%20until%20there%20are%20lots%20of%20'bubbles'%20or%20holes,%20then%20flip%20and%20cook%20on%20the%20other%20side.%3C/p%3E%3Cp%3EIt's%20seriously%20that%20easy!%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EI%20could%20hardly%20get%20these%20on%20the%20plate%20I%20was%20eating%20them%20so%20fast.%20They%20were%20savory%20and%20chewy%20and%20delicous!%3C/p%3E){kind=link}
