  • 2 lb red Swiss chard
  • 1 1/2 Tbsp. extra virgin olive oil
  • 1/4 c. finely minced onion
  • 1 x garlic clove chopped
  • 1 pch red pepper flakes
  •     Coarse salt
  •     Freshly grnd pepper
  • 1 Tbsp. finely minced parley
  • 1 Tbsp. finely minced cilantro
  •     Fresh mint sprigs for garnish
  •     Lemon wedges for garnish

Directions

  1. Cut Swiss chard leaves crosswise into 3/4-inch pcs and the stems into 1/2-inch pcs. Heat 1 1/2 Tbsp. extra virgin olive oil in large skillet over medium heat. Add in onion and 1 clove garlic, healthy pinch red pepper flakes, and salt and pepper to taste. Saute/fry till translucent/soft, about 3 to 5 min. Add in stems and cook 3 to 5 min, covered. Add in leaves in layers, seasoning each layer with salt. Cover and cook stirring occasionally till wilted and tender, about 5 to 6 min. Toss in parsley and cilantro and serve garnished with mint and lemon wedges.
