Ingredients

  • 1 lb Medium shrimp, peeled and
  •     Deveined
  • 3 tsp Oil, divided
  • 1 lrg Yellow bell pepper, stemmed,
  •     Seeded and cut into very
  •     Thin strips
  • 2 med Green onions, thinly sliced
  • 3/4 c. Spicy Plum Sauce (see Separate recipe)
  • 1 Tbsp. Finely chopped cilantro

Directions

  1. 1. Prepare the shrimp and chill till ready to cook.
  2. 2. In a heavy skillet, heat 1 tsp. oil over medium heat. Add in half of the shrimp and saute/fry till pink and just cooked through, about 2 min.
  3. Don't overcook. Remove from the pan and heat another tsp. oil. Add in the remaining shrimp and cook as before. Remove from the pan.
  4. 3. Put the remaining tsp. oil in the pan. Add in the bell pepper and green onions; saute/fry 3 min. Add in the plum sauce and simmer 2 min.
  5. Stir in the shrimp and cook over medium-low heat 2 min.
  6. 4. Sprinkle with cilantro and serve.
