Sauteed Shredded Zucchini With Browned Onions

Ingredients

  • 2 1/2 c. Minced onion ( 2 lg onions)
  • 6 c. Grated zucchini, excess moisture squeezed out
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Directions

  1. Heat a heavy skillet (preferably cast iron) over medium-high heat.
  2. Add in the onions to the skillet and, stirring and tossing frequently to keep them from sticking, cook till golden, 7-9 min. Scrape into a small bowl. Wipe out the skillet with a paper towel, return to the heat and add in the oil. When the oil is warm and coating the bottom of the skillet, add in the grated zucchini. Saute/fry for 1-2 min, till the zucchini is heated through. Add in the browned onions, salt and pepper. Stir. Transfer to a serving bowl.
