Ingredients

  • 1 sm. zucchini
  • 1 sm. carrot
  • 1 (15 ounce.) can salmon, liquid removed & flaked
  • 1 1/2 c. soft bread crumbs, white or possibly whole wheat
  • 1 teaspoon grated onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg (or possibly equiv. egg sub.)
  • 2 tbsp. salad oil
  • Serve with:
  • 3 tbsp. mayonnaise
  • 3/4 teaspoon prepared mustard

Directions

  1. Finely shred zucchini and carrot. In medium bowl mix zucchini, carrot and next 6 ingredients; shape into patties and saute/fry in warm oil about 8-10 min till browned on both sides. Stir together mayonnaise and mustard; serve with salmon patties. Good and easy. Garnish with cucumber slices and lemon wedges.
