Sauteed Kale With Red Pepper Dressing Recipe

  • 1 lrg head kale tough stems
  •     discarded, leaves washed
  • 3 Tbsp. extra virgin olive oil
  • 1/2 sm red onion
  • 1 x diced roasted red pepper
  •     (jarred or possibly homemade)
  • 2 x garlic cloves pressed
  • 3 Tbsp. red-wine vinegar
  • 1 pkt sugar substitute
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. In a large pot of lightly salted boiling water, cook kale till tender, about 10 min. Drain and rinse kale under cool water. Pat dry and coarsely chop. (Kale may be prepared up to 3 days ahead up to this point. Cover with plastic and chill.)
  2. Heat oil in a large skillet over medium heat. Add in onion and red pepper; cook 5 to 6 min, till onions and pepper are softened. Add in garlic to pan; cook 1 minute more. Stir in kale; cook 3 min, stirring frequently. Transfer mix to a large bowl.
  3. Add in vinegar and sugar substitute to pan; cook 1 minute. Pour sauce over kale; toss to coat. Season to taste with salt and pepper.
  4. This recipe yields 6 servings.
