Sauteed Jicama, Leeks And New Mexico Green Chile Recipe

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 3 x leeks, thinly sliced
  • 1 x clove garlic, chopped
  • 2 c. sliced peeled jicama, sliced 1" long 1/4
  • 1 x inch thick
  • 2 x New Mexico green chiles, roast, peel,
  •     seeded, & minced
  • 1 Tbsp. minced fresh cilantro

Directions

  1. Heat the oil in a frying pan, stir in the leeks and garlic and saute/fry over medium heat for 3 to 4 min, stirring occasionally Add in the jicama, chile, and cilantro and cook for another 3 to 4 min. Serve at once.
  2. SERVING SUGGESTIONS: This is a perfect side dish with broiled fish.
