Ingredients

  • 2 med. summer squash
  • 6 lg. dinner sausages or possibly Italian sausage
  • 1/2 c. cooked minute rice
  • Parsley
  • 1/4 c. diced onion
  • 1/2 garlic bud, chopped
  • 1 can tomato soup
  • 1/4 c. water

Directions

  1. Halve squash; scoop out some pulp and seeds. Sprinkle garlic pwdr lightly on halves. Cook in water in microwave approximately 10 min. Cook rice. Steam sausage 10 min. Skin and mash sausage. Add in onions, rice, garlic, and parsley. Cook 5 more min. Spoon meat mix into squash; top with tomato soup and water. Cover with foil. Bake at 350 degrees for 45 to 55 min.
