Sausage, Spinach & Tomato Soup

Super quick and easy soup! Hearty with a great flavor. Perfect when you are short on time and want a warm comforting hearty soup!

Ingredients

  • 1 lb. sweet turkey italian sausage
  • 1 Tb. vegatable oil
  • 1 C. chopped yellow onion
  • 2 tsp. bottled minced garlic
  • 2 15oz. cans of cannellini beans, rinsed and drained
  • 2 15oz cans. organic stewed tomatoes
  • 32 oz. box organic chicken broth
  • 2-4 C. baby spinach (your preference on amount)
  • 1 Tb. chopped fresh basil
  • 2 tsp. italian seasoning
  • grated romano cheese (for topping)

Directions

  1. Removie casings from sausage and crumble into pan with oil.
  2. Cook until browned.
  3. Add onion and garlic, cook for 3 more minutes.
  4. Add broth, tomatoes, beans, italian seasoning.
  5. Bring to boil, then add fresh basil and spinach and remove from heat.
  6. Stir until spinach wilts and serve immediately.
  7. Top with cheese.
