Sausage Ring With Cheese Scrambled

Ingredients

  • 6 Large eggs
  • 3/4 c. lowfat milk
  • 3/4 c. crushed saltine crackers
  • 1/2 c. minced peeled apple
  • 1/8 c. minced onion
  • 1 pound pork sausage
  • 1 1/2 tbsp. butter
  • 1 1/2 tbsp. all-purpose flour
  • 1/2 c. cream style cottage cheese
  • Pepper
  • 1/4 teaspoon salt

Directions

  1. Beat together 1 egg and 1/4 c. lowfat milk. Stir in cracker crumbs, apple, onion and 1/8 tsp. pepper. Add in sausage; mix well. Firmly pat meat mix into ring shape onto a shallow baking pan. Bake in 350 degree oven for 50 min. Transfer to a platter and keep hot.
  2. Meanwhile, in 2 qt saucepan, heat butter. Blend in flour. Add in remaining lowfat milk all at once. Cook and stir over medium heat till bubbly. Cook and stir 2 min more.
  3. Beat together the remaining Large eggs, cheese, salt and pepper. Stir into sauce. Cook, stirring frequently, till Large eggs are hard but moist. Spoon Large eggs into center of sausage ring. Serves 6.
