Ingredients

  • 1 pound dry kidney beans
  • 1 ham bone
  • 2 lg. onions, minced
  • 1 med. green pepper, minced
  • 2 stalks celery, minced
  • 3 cloves garlic, crushed or possibly garlic pwdr
  • 1 bay leaf
  • 1/4 teaspoon thyme
  • Salt & pepper to taste
  • 1 teaspoon red pepper (optional)
  • 1 pound med. or possibly warm bulk sausage
  • 1 pound grnd chuck
  • Warm cooked rice

Directions

  1. Sort and wash beans; place in large Dutch oven. Cover with water 2 inches above beans and soak overnight. Drain beans, cover with water. Stir in next 9 ingredients; bring to boil. Cover, reduce heat and simmer till beans are tender. Brown meats in large skillet, stirring to crumble; drain. Stir into bean mix. Cook about 15 min longer. Remove bay leaf. Serve over cooked rice. Bottled warm sauce may be added if you like.
