Sausage Breakfast Casserole

We love a good casserole at our house and since we are cooking up classic casseroles this month, the first one that came to my mind was a breakfast casserole. We love breakfast for dinner and this delicious casserole is the perfect meal for either dinner or breakfast. I made a smaller version, but if you are feeding a crowd, just double the ingredients and it will make a 9 x 13 inch casserole.

Ingredients

  • 1 package pork sausage (12 ounce)
  • 1/2 cup bell pepper, chopped
  • 1/4 cup onion, chopped
  • 1 1/2 cups frozen hash browns
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 1/4 teaspoon pepper
  • 2 eggs

Directions

  1. Heat oven to 400 degrees. Grease a rectangular baking dish (11 x 7 inch). Cook sausage, peppers and onion until sausage is no longer pink, remove from heat and drain. Mix together the sausage, potatoes and 1/2 cup of the cheese and put it in the casserole dish. (The potatoes do not need to be thawed, just break them up a bit with a fork before mixing.)
  2. Mix together the Bisquick, milk, pepper and eggs. Pour over the sausage and potato mixture. Bake uncovered for approximately 30 minutes. Remove from oven and top with the remaining 1/2 cup cheese. Bake for 2 minutes longer. Cool for 5 minutes before serving. (If you double the recipe and use a bigger dish, you will have to adjust your baking time to approximately 40 minutes.) Makes 6 servings.
