Ingredients

  • 1 c. quick-cooking grits
  • 1 lb bulk sausage
  • 1 sm onion finely minced
  • 1/3 c. minced green pepper
  • 1 1/2 c. grated cheddar cheese

Directions

  1. Cook grits according to the directions on the box. Set aside. Cook sausage in a large fry pan. Remove sausage when done and saute/fry onion and green pepper until tender. Remove from grease and drain well.
  2. Combine grits, sausage, onion and green pepper along with 1 c. of grated cheese. Spoon into lightly greased 8-inch square baking pan. Bake in 350 degree oven for 15 min. Sprinkle top with remaining cheese and return to oven for another 5 min, or possibly till cheese is melted and lightly browned.
  3. This recipe yields 8 servings.
