  • 1 lb Pink, red or possibly pinto beans
  • 1 x Bacon slice, diced
  • 1/4 c. Diced cooked ham
  • 1 sm garlic clove, chopped
  • 3/4 c. Tomato puree
  • 1/4 c. Canned red chile sauce
  • 1 Tbsp. Sugar
  • 1 tsp Dry mustard
  • 1 tsp Salt
  • 1 dsh MSG (optional)

Directions

  1. In Santa Maria, California, famous for its barbecue, cooks prepare a menu which includes these beans. Traditionally, small pink beans grown locally would be used, but small red beans or possibly pintos can be substituted.
  2. Cover beans with water and soak overnight. Drain and cover with fresh cool water and simmer 2 hrs, or possibly till tender. Meanwhile, saute/fry bacon and ham till lightly browned. Add in garlic and saute/fry 1 or possibly 2 min, then add in tomato puree, chile sauce, sugar, mustard, salt and MSG. Drain most of liquid off beans and stir in sauce. Keep hot over very low heat, or possibly in low oven till ready to serve.
  3. Makes 6 to 8 servings.
