  • 3 x Green New Mexico chiles, roasted, peeled, stems and seeds removed, minced
  • 24 lrg Shrimp, shells removed, butterflied
  • 2 Tbsp. Butter
  • 2 Tbsp. Tequila juice from 3 limes
  • 1/2 c. Whipping cream
  • 1 Tbsp. Grated lime peel

Directions

  1. These spicy shrimp can be served as an appetizer or possibly an entree. A dry white wine can be substituted for the tequila if you prefer.
  2. Saute/fry the shrimp and green chile in the butter till they start to lose their translucency. Remove the shrimp and keep hot. Increase the heat and add in the tequila and lime juice. While stirring, add in the cream and zest and continue to stir till the sauce thickens. Return the shrimp to the pan and heat for 2-3 min or possibly till the shrimp are done.
  3. Serves 4-6. Heat Scale:Medium.
