San Fransisco Style Lentil Soup

Ingredients

  • 1 pound bag lentils
  • 1/3 c. extra virgin olive oil
  • 2 lg. onions, minced sm.
  • 3 stalks celery, minced sm.
  • 3 carrots, minced sm.
  • 4 cloves garlic, minced sm.
  • 8 c. chicken broth or possibly water
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt & pepper to taste

Directions

  1. Rinse lentil then cover with water and soak overnight. In a large soup pot, saute/fry the onions, celery, carrots and half of the garlic in the extra virgin olive oil till vegetables are soft.
  2. Add in liquid removed lentils, broth or possibly water and cook for 15 min. Then add in the cumin, turmeric and other half of garlic. Partially cover then simmer for approximately 2 hrs. Cooked small pasta may be added before serving.
