- 2 cups finely crushed pretzels
- ¼ cup granulated sugar
- ⅔ cup unsalted butter, melted
- For the Cake:
- 16 ounces dark chocolate, finely chopped
- ½ cup unsalted butter, cut into small pieces
- 4 eggs, separated
- ¼ cup superfine sugar
- 2 teaspoons flaky sea salt (such as fleur de sel or Maldon)

%20that%20was%20huffing%20and%20puffing%20and%20looking%20all%20kinds%20of%20guilty.%20Needless%20to%20say,%20I%20apparently%20haven%E2%80%99t%20found%20a%20safe%20resting%20spot%20for%20food%20on%20the%20counter%20yet,%20and%20unfortunately,%20my%20husband%20and%20I%20(and%20Einstein,%20of%20course!)%20were%20the%20only%20two%20that%20got%20to%20taste%20how%20utterly%20amazing%20this%20cake%20is!%3C/p%3E%3Cp%3EI%20saw%20a%20recipe%20in%20a%20recent%20Donna%20Hay%20magazine%20for%20a%20salted%20chocolate%20cake%20that%20had%20pretzels%20on%20top.%20I%20loved%20the%20idea,%20but%20thought,%20if%20we%E2%80%99re%20putting%20pretzels%20on%20top,%20then%20why%20not%20put%20them%20on%20the%20bottom,%20too?!%20I%20am%20such%20a%20sucker%20for%20the%20combination%20of%20sweet%20and%20salty%20flavors,%20which%20is%20why%20I%20can%E2%80%99t%20ever%20get%20enough%20of%20things%20like%20chocolate-covered%20pretzels%20or%20chocolate-covered%20popcorn.%3C/p%3E%3Cp%3EI%20stole%20the%20crust%20recipe%20from%20one%20of%20my%20favorite%20desserts%20%E2%80%93%20strawberry%20pretzel%20salad%20%E2%80%93%20which%20consists%20of%20crushed%20pretzels,%20sugar%20and%20melted%20butter.%20It%E2%80%99s%20a%20perfect%20base%20for%20the%20dark%20chocolate,%20truffle-like%20cake.%20The%20addition%20of%20flaky%20sea%20salt%20into%20the%20actual%20cake%20gives%20it%20the%20perfect%20punch%20of%20salty/sweet%20balance.%20The%20chocolate%20cake%20itself%20isn%E2%80%99t%20quite%20as%20dense%20as%20a%20truffle%20filling,%20but%20is%20just%20as%20smooth%20and%20creamy.%3C/p%3E%3Cp%3EYou%20could%20probably%20make%20this%20with%20semisweet%20chocolate%20if%20you%20prefer%20your%20chocolate%20a%20little%20bit%20sweeter,%20but%20I%20really%20do%20prefer%20the%20combination%20of%20dark%20chocolate%20and%20salt.%20This%20cake%20is%20such%20a%20fantastic%20combination%20of%20not%20only%20flavors,%20but%20also%20textures.%20If%20you%E2%80%99re%20a%20fan%20of%20sweet%20and%20salty,%20run%20into%20the%20kitchen%20and%20make%20this%20today!%3C/p%3E%3Cp%3E(And%20if%20you%20have%20a%20food-obsessed%20Golden%20Retriever,%20make%20sure%20you%20push%20that%20cake%20far,%20far%20away%20from%20the%20edge%20of%20the%20counter!)%3C/p%3E%3Cp%3EFour%20years%20ago:%20Root%20Beer%20Float%20Cake%3C/p%3E%3Cp%3EFive%20years%20ago:%20Classic%20Lemonade%3C/p%3E%3Cp%3ESix%20years%20ago:%20Chocolate%20Chip%20Cookie-Topped%20Brownies%3C/p%3E%3Cp%3ESeven%20years%20ago:%20Homemade%20Pancake%20Mix%3C/p%3E%3Cp%3ESalted%20Dark%20Chocolate%20Pretzel%20Truffle%20Cake%3C/p%3E%3Cp%3EYield:%208%20to%2010%20servings%3C/p%3E%3Cp%3EPrep%20Time:%2030%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2025%20to%2035%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%204%20hours%3C/p%3E%3Cp%3EA%20crushed%20pretzel%20crust%20topped%20with%20a%20salted%20dark%20chocolate%20truffle-like%20filling,%20topped%20off%20with%20even%20more%20pretzels.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Crust:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees%20F.%20Lightly%20grease%20a%209-inch%20springform%20pan%20and%20line%20the%20bottom%20with%20parchment%20paper.%3C/p%3E%3Cp%3E2.%20Make%20the%20Crust:%20In%20a%20medium%20bowl,%20mix%20together%20the%20pretzel%20crumbs,%20sugar%20and%20butter%20with%20a%20fork%20until%20evenly%20moistened.%20Press%20onto%20bottom%20of%20the%20prepared%20pan.%20Bake%20until%20golden%20brown%20and%20set,%2010%20to%2015%20minutes.%20Remove%20from%20the%20oven%20and%20set%20aside.%3C/p%3E%3Cp%3E3.%20Reduce%20the%20oven%20temperature%20to%20325%20degrees%20F.%3C/p%3E%3Cp%3E4.%20Make%20the%20Cake:%20Place%20the%20chocolate%20and%20butter%20in%20a%20large%20heatproof%20bowl%20over%20a%20saucepan%20of%20simmering%20water;%20stir%20occasionally%20until%20completely%20melted%20and%20smooth.%20Remove%20from%20the%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3E5.%20Place%20the%20egg%20whites%20in%20the%20bowl%20of%20an%20electric%20mixer%20and,%20using%20a%20whisk%20attachment,%20whip%20the%20egg%20whites%20on%20medium%20speed%20until%20soft%20peaks%20form.%20Gradually%20add%20the%20sugar%20and%20whisk%20until%20the%20mixture%20is%20thick%20and%20glossy.%3C/p%3E%3Cp%3E6.%20Add%20the%20egg%20yolks%20and%20salt%20to%20the%20chocolate%20mixture%20and%20stir%20until%20thoroughly%20combined.%20Working%20in%20three%20batches,%20gently%20fold%20the%20egg%20white%20mixture%20into%20the%20chocolate%20mixture%20until%20just%20combined.%3C/p%3E%3Cp%3E7.%20Pour%20the%20batter%20into%20the%20prepared%20pan,%20smooth%20into%20an%20even%20layer,%20and%20arrange%20the%20pretzels%20on%20top.%20Bake%20until%20a%20toothpick%20inserted%20near%20the%20edge%20comes%20out%20clean%20and%20the%20center%20is%20just%20set,%2025%20to%2035%20minutes.%20Remove%20from%20the%20oven%20and%20let%20sit%20at%20room%20temperature%20for%2010%20minutes,%20then%20chill%20in%20the%20refrigerator%20for%20at%20least%203%20hours%20before%20serving.%3C/p%3E){kind=link}
