Ingredients
- 1/2 lb Salt cod
- 1/4 c. Peanut oil
- 2 Tbsp. Butter
- 1 lrg Yellow onion peeled and minced
- 1/4 x Green bell pepper cored, seeded,
- Â Â and diced
- 1/4 x Red bell pepper cored, seeded,
- Â Â and diced
- 19 ounce Ackee - (1 can) liquid removed, see * Note
- Â Â Tabasco or possibly Jamaican yellow warm sauce to taste
Directions
- * Note: May be found in Jamaican or possibly Latino markets.
- Rinse the salt cod several times in cool water. Soak for 24 hrs, freshening the water several times. Drain.
- Simmer the liquid removed salt cod in fresh water for about 10 min. Drain, cold and flake the cod.
- Heat a large frying pan and add in the oil and butter. Saute/fry the onion till transparent. Add in the peppers, liquid removed ackee and salt cod; saute/fry and toss till all is warm.
- Add in Tabasco sauce to taste.
- This recipe serves 4 as a taste of a national treat.
- Comments: While this is the national dish of Jamaica, you must understand which the fruit from the ackee tree simply does not travel well when fresh. It must be canned.
- This dish is very good and looks very much like scrambled Large eggs with peppers and fish flakes.
