%20%20I%20tackled%20it%20a%20couple%20of%20weeks%20ago.%20%20It%20was%20appalling%20the%20amount%20of%20food%20I%20threw%20away.%3C/p%3E%3Cp%3EMy%20idea%20for%20keeping%20food%20going%20%20into%20the%20freezer%20from%20never%20coming%20back%20to%20life%20is%20to%20mount%20a%20whiteboard%20above%20the%20freezer%20in%20the%20garage.%20%20(Hmm%E2%80%93or%20maybe%20a%20magnetic%20one%20on%20the%20freezer%20lid%20would%20be%20even%20better.)%20%20I%E2%80%99ll%20write%20down%20and%20erase%20what%20goes%20in%20and%20out.%20%20I%20will%20let%20you%20know%20how%20that%20works%20out.%20%20Hopefully,%20I%20won%E2%80%99t%20be%20confessing%20to%20throwing%20out%20a%20dumpster%20full%20of%20food%20next%20summer.%3C/p%3E%3Cp%3EI%20did%20find%20a%20couple%20of%20treasures%20that%20I%20was%20able%20to%20salvage.%20%20One%20was%20a%20boneless%20turkey%20breast%20I%20think%20we%20bought%20last%20fall%20when%20we%20thought%20it%20would%20be%20an%20intimate%20Thanksgiving%20for%20two.%20%20We%20ended%20up%20with%20company%20(my%20mom,%20which%20was%20a%20good%20thing)%20and%20actually%20went%20out%20for%20Thanksgiving%20brunch%20(which%20was%20another%20REALLY%20good%20thing).%3C/p%3E%3Cp%3ESo,%20noticing%20the%20turkey%20breast%20was%20set%20to%20expire%20next%20week,%20I%20decided%20to%20roast%20it%20this%20morning.%20%20How%20to%20roast%20a%20summer%20turkey%E2%80%A6?%20%20I%20didn%E2%80%99t%20want%20the%20traditional%20Thanksgiving%20turkey%20with%20butter,%20sage,%20and%20stuffing.%20%20The%20directions%20on%20the%20package%20suggested%20putting%20the%20turkey%20breast%20on%20a%20roasting%20rack.%20%20Since%20my%20roasting%20rack%20can%20accommodate%20a%2025%20lb.%20turkey,%20I%20thought%20it%20was%20a%20bit%20of%20overkill%20to%20get%20out%20the%20roasting%20pan%20for%20a%204%20lb.%20breast.%3C/p%3E%3Cp%3EMy%20solution:%20%20I%20went%20to%20the%20herb%20garden%20and%20snipped%20a%20fistful%20of%20rosemary%20branches,%20came%20in,%20drizzled%20them%20with%20olive%20oil,%20%20and%20placed%20them%20in%20the%20bottom%20of%20the%20baking%20pan.%20%20I%20placed%20the%20turkey%20breast%20on%20top%20of%20that,%20rubbed%20more%20olive%20oil%20on%20the%20top%20of%20the%20turkey,%20sprinkled%20it%20with%20sea%20salt%20and%20fresh%20cracked%20pepper,%20and%20it%20is%20roasting%20as%20we%20speak.%20%20%20%20The%20kitchen%20smells%20great!%3C/p%3E%3Cp%3EI%20have%20modified%20that%20fabulous%20salsa%20verde%20%20recipe%20and%20am%20making%20a%20salad%20of%20fresh%20tomatoes%20and%20cucumbers%20to%20accompany%20our%20turkey.%3C/p%3E%3Cp%3ESalsa%20Verde%20Tomato%20Cucumber%20Salad%3C/p%3E%3Cp%3EPlace%20first%20ten%20ingredients%20in%20blender%20and%20pulse%20until%20incorporated.%20%20Place%20cucumber%20and%20tomatoes%20in%20a%20sealable%20container.%20%20Pour%20salsa%20verde%20over%20vegetables%20and%20toss%20to%20coat.%20%20Refrigerate%20for%204%20hours.%20%20Toss%20salad%20again%20to%20distribute%20dressing%20before%20serving.%3C/p%3E%3Cp%3EWhat%20a%20great%20way%20to%20give%20thanks%20for%20fresh%20herbs,%20good%20olive%20oil,%20and%20just%20picked%20vegetables%20from%20the%20garden%20(not%20to%20mention%20finding%20a%20leftover%20turkey%20in%20the%20freezer!)%E2%80%94Thanksgiving%20in%20August!%3C/p%3E%3Cp%3ERosemary%3C/p%3E){kind=link}
