Ingredients

  • 16 c. tomatoes, peeled & mashed (I wash, core & put in blender, strain)
  • 2 c. green pepper, cut fine
  • 2 c. onions, minced
  • 3-4 jalapeno peppers, cut fine
  • 6-8 garlic cloves, cut fine
  • 5 tbsp. salt
  • 1 tbsp. pepper
  • 4 tbsp. chili pwdr
  • 3 tbsp. sugar
  • 1 c. vinegar

Directions

  1. Simmer all ingredient 30 to 40 min, then thicken with cornstarch (about 3/4 c. dissolved in a little cool water). Boil in warm water bath for 20 min. Makes 8 pints. If you do not have fresh jalapenos can use 3 to 4 Tbsp. canned.
