  • 1 pkg. cork screw macaroni
  • 6 med. tomatoes (diced)
  • 2 med. onions (diced)
  • 2 sm. med. green peppers (diced)
  • 2 (4 ounce.) cans diced green chili peppers
  • 1 (6 ounce.) can pitted ripe olives (sliced)
  • 1/2 c. corn oil
  • 1/3 c. lemon juice
  • 1/3 c. vinegar
  • 1/4 c. minced fresh cilantro or possibly 2 tbsp. dry coriando (crushed)
  • 1 tbsp. chili pwdr
  • 2 tbsp. Mexican flavor bouillon granules
  • 1 1/2 teaspoon garlic salt
  • Fresh cilantro sprigs (optional)

Directions

  1. Cook pasta according to package directions. In large bowl combine pasta with tomatoes, onions, green and red peppers, undrained.
  2. For dressing use screw top jar. Combine oil, lemon, vinegar, garlic salt, sugar and tsp. pepper. Cover, shake to mix. Pour over pasta mix. Toss gently till all ingredients are well coated. Top with cilantro sprigs.
