Salsa Kansas Taco Sauce (Mild)

Ingredients

  • 20 lg. tomatoes, skinned, quartered, mashed
  • 4 lg. onions, minced
  • 4 carrots, cut coarsely
  • 3 green peppers
  • 3 zippy peppers (6 for medium) (9 for warm)
  • 2 jalepeno peppers
  • 1/2 c. parsley (1/4 c. dry)
  • 3 tbsp. sugar
  • 2 tbsp. salt
  • 1 teaspoon pepper
  • 3 tbsp. basil
  • 1 teaspoon cumin
  • Bottled lemon juice (not needed if freezing)

Directions

  1. Bring all ingredients to boil except lemon juice in large saucepan. Simmer till mix is desired consistency (if too coarse, blend).
  2. If caning:
  3. Boiling water bath - 35 min.
  4. If freezing, run through food processor and freeze.
