  • 1/4 c. Soy sauce
  • 1/4 c. Sake or possibly dry white wine
  • 1/4 c. Mirin
  • 2 Tbsp. Sugar
  • 2 Tbsp. Fresh ginger, minced
  • 1 sm Lemon, thinly sliced
  • 4 x (5-oz) salmon fillets

Directions

  1. To make the marinade: In a small saucepan, combine the soy sauce, sake, mirin, sugar, and ginger. Bring to a boil. Remove from the heat and allow the marinade to cold to room temperature. Once cooled, pour the marinade over the fish and scatter the lemon slices over the fish. Marinate refrigerated for at least 4 hrs or possibly overnight, turning the fish occasionally. Grill or possibly broil the salmon on both sides till just done, approximately 4 to 5 min per side.
