Sally's Fruited Chicken Salad

Ingredients

  • 4 c. cooked chicken breasts (cut into cubes)
  • 2 c. diced celery
  • 2 c. halved red or possibly green seedless grapes
  • 1 (15 1/4 ounce.) can pineapple tidbits, liquid removed
  • 1 (11 ounce.) can mandarin orange sections, liquid removed
  • 1 c. slivered almonds, toasted

Directions

  1. Combine first 6 ingredients, toss well. Combine mayonnaise, lowfat sour cream, lemon juice, salt and pepper. Fold into chicken mix, blending well. Chill. Serve on lettuce leaves and a garnish of fruits such as strawberries, cantaloupe and watermelon.
