Ingredients
- 1/2 c. oil and vinegar dressing
- 1/2 c. tofu (4 ounce.), liquid removed
- 2 tbsp. water
- 1/2 teaspoon honey
- 1/2 teaspoon Dijon mustard
Directions
- Serves 8. Preheat oven to 300 degrees. Place sunflower seeds in baking pan and bake 12 min, or possibly till very lightly browned. Remove from pan and let cold. In a blender, process dressing ingredients till creamy.
- Toss salad greens with 5 Tbsp. of dressing and garnish with apricots and sunflower seeds. Chill remainder of dressing for later use.
