  • 1 lb Skinless bonesless chicken breasts, cut into bite-size pcs
  • 29 ounce No-salt-added whole tomatoes, undrained and minced, two-cans
  • 27 1/2 ounce No-salt-added chicken broth, two-cans
  • 4 ounce Canned minced green chiles, undrained
  • 1/4 tsp Salt
  • 4 med Corn tortillas, 6-inch diam, halved
  • 1/2 c. Minced green onions
  • 2 ounce Reduced-fat monterey jack cheese, shred to make 1/2-c.
  • 1/4 c. Minced fresh cilantro
  • 1/4 c. Green taco sauce, commercial

Directions

  1. Combine first 5 ingredients in a large saucepan; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 30 min.
  2. Cut 1 tortilla half into 1-inch pcs, and place in a soup bowl. Add in 1 c. soup; top with 1 Tbsp. green onions, 1 Tbsp. cheese, 1-1/2 tsp. cilantro, and 1-1/2 tsp. green taco sauce. Repeat procedure with remaining ingredients.
