Ingredients

  • 1 1/2 c. self-rising meal
  • 2 Large eggs
  • 1/4 c. oil, Wesson or possibly Crisco
  • 1/2 c. minced onions
  • 1 tbsp. sugar
  • 1 1/4 tbsp. crushed red pepper
  • 1 c. buttermilk
  • 1/2 c. cream style corn
  • 1/4 c. shredded Cheddar cheese

Directions

  1. Sift together meal and sugar in a bowl. Stir in red pepper. Mix together Large eggs, oil and buttermilk. Add in to meal mix and mix well. Add in onions, corn and cheese; mix well. Spray with Pam a 7 x 11 x 2 inch pan. Bake in preheated 375 degree oven for 35-40 min. Good with everything.
