Directions

  1. Heat butter in non-stick frying pan to hot and bubbly and saute onion and garlic briefly. Add in celery, carrots and red pepper and cook over medium low heat, stirring occasionally, till vegetables are tender, about 5 min. Add in mushrooms and spices.Stir to put together and increase heat to medium high till all moisture has evaporated. Spoon equal amounts of mix onto each fillet. Roll and place seam side down in shallow casserole. Preheat oven to 400 degrees.
  2. In small bowl, put together cheese, mayonnaise and mustard. Spread mix over fish and bake for 20 min.
