- 2 lbs (907 g) stewing beef
- 4 tsp canola oil, divided
- 1 cup each diced onions and diced celery
- 1 tbsp all purpose flour
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 can (28 oz / 796 ml) stewed tomatoes, undrained
- 1 cup beef broth
- 1 tbsp red wine vinegar
- ½ tsp freshly ground black pepper
- ¼ tsp salt
- 1 bay leaf
- 1 lb (454 g) potatoes, peeled and quartered

November 2, 2010This taste great, I added garlic to the onion and celery, I also added carrots and cabbage to the tomatoes and used chicken broth instead of beef. It was great for a cooler day and took no time at all.

%20that%20appear%20on%20the%20screen.%20If%20you%20miss%20the%20notes%20the%20song%20sounds%20like%20crap,%20the%20crowd%20boos%20and%20you%20all%20lose.%3C/p%3E%3Cp%3EOf%20all%20the%20songs%20we%20played%20that%20night,%20the%20song%20%E2%80%9CDon%E2%80%99t%20Stop%20Believing%E2%80%9D%20by%20Journey%20was%20the%20stand-out.%20It%20wasn%E2%80%99t%20necessarily%20because%20it%20was%20anyone%E2%80%99s%20favorite%20song,%20but%20it%20was%20the%20song%20that%20brought%20us%20all%20together.%20Even%20the%20people%20that%20weren%E2%80%99t%20playing%20the%20game%20could%20not%20resist%20singing%20the%20memorable%20chorus%20%E2%80%9CDon%E2%80%99t%20stop%20believing%E2%80%A6hold%20on%20to%20that%20feeling%E2%80%9D.%3C/p%3E%3Cp%3EThe%20next%20day%20I%20was%20in%20the%20kitchen%20preparing%20this%20stew%20and%20I%20had%20this%20thought%20that%20homemade%20stew%20has%20many%20of%20the%20same%20traits%20as%20the%20song%20%E2%80%9CDon%E2%80%99t%20Stop%20Believing%E2%80%9D.%20It's%20pleasing%20to%20our%20senses%20and%20is%20the%20type%20of%20dish%20that%20brings%20people%20together.%20I%20choose%20a%20beefy%20rhythm%20for%20this%20stew,%20followed%20by%20a%20melody%20of%20celery,%20onions%20and%20tomatoes.%20To%20add%20volume%20I%20used%20a%20beef%20broth%20and%20finally%20I%20harmonized%20it%20together%20using%20Italian%20seasoning,%20garlic%20and%20red%20wine%20vinegar.%3C/p%3E%3Cp%3EAlthough%20you%20never%20hear%20people%20say%20%E2%80%9Cmy%20favorite%20food%20is%20stew%E2%80%9D,%20it%20is%20a%20dish%20that%20everyone%20always%20seems%20to%20enjoy.%20The%20nice%20thing%20about%20this%20stew%20is%20it%E2%80%99s%20almost%20impossible%20to%20screw%20up%20and%20you%E2%80%99ll%20never%20have%20to%20worry%20about%20hearing%20a%20series%20of%20%E2%80%9Cboos%E2%80%9D%20as%20a%20result%20of%20your%20efforts%E2%80%A6which%20is%20very%20different%20from%20my%20Rock%20Band%20experience.%3C/p%3E%3Cp%3ERock%20Band%20Beef%20Stew%3C/p%3E%3Cp%3EInstruments%3C/p%3E%3Cp%3ELyrics%3C/p%3E%3Cp%3ETrim%20excess%20fat%20from%20beef%20and%20cut%20into%20%C2%BD-inch%20cubes.%20Pat%20dry%20with%20paper%20towels.%3C/p%3E%3Cp%3EIn%20a%20large%20soup%20pot,%20heat%202%20tsp%20of%20oil%20over%20medium%20heat.%20Add%20half%20the%20beef%20and%20cook%20until%20well%20browned%20on%20the%20outside.%20Remove%20beef%20from%20pot%20and%20set%20aside.%20Repeat%20the%20process%20with%20the%20remaining%20oil%20and%20beef.%3C/p%3E%3Cp%3EAdd%20onions%20and%20celery%20to%20pot.%20Cook%20and%20stir%20over%20medium%20heat%20until%20vegetables%20begin%20to%20soften,%20about%205%20minutes.%20Return%20browned%20beef%20to%20pot.%20Stir%20in%20flour,%20garlic%20and%20Italian%20seasoning.%20Cook%20and%20stir%20for%201%20minute.%20Add%20tomatoes.%20Cook%20and%20stir,%20scraping%20up%20any%20brown%20bits%20from%20the%20bottom%20of%20the%20pot%20with%20a%20wooden%20spoon.%20Add%20beef%20broth,%20vinegar,%20pepper,%20salt%20and%20bay%20leaf.%20Bring%20to%20a%20boil.%20Reduce%20heat%20to%20low,%20cover,%20and%20simmer%20for%2040%20minutes.%3C/p%3E%3Cp%3ERemove%20bay%20leaf.%20Add%20potatoes.%20Cover%20and%20simmer%20for%2040%20to%2045%20minutes%20more%20or%20until%20beef%20and%20vegetables%20are%20tender%20(see%20cooking%20tip).%20Serve.%3C/p%3E%3Cp%3EVolume:%20Makes%206%20servings%3C/p%3E%3Cp%3EHip%20Cooking%20Tip:%20To%20check%20if%20the%20stewing%20beef%20is%20tender,%20push%20it%20against%20the%20inside%20of%20the%20pot%20with%20a%20fork.%20If%20it%20shreds%20apart,%20you%20know%20it%E2%80%99s%20super%20tender%20and%20ready%20to%20serve.%20Cook-on!%E2%80%9D%3C/p%3E%3Cp%3EBrent%20Garell%3C/p%3E%3Cp%3EThe%20Kitchen%20Roadie%3C/p%3E%3Cp%3Ebrent@cookapalooza.com%3C/p%3E){kind=link}
