Delicious seasonal vegetables roasted with herbs! A great side dish.

Directions

  1. Rinse vegetables well, pat dry, cut on the bias in 2-3" pieces, add into a large bowl with all seasonings and transfer to a non stick rimmed baking sheet pan, drizzle with Olive oil, cover with aluminum foil and Bake @ 425 F for 25 minutes
  2. Goes great with any main dish entrée.
