Roasted Red Potatoes & Bacon~Cheese Baked Casserole

Ingredients

  • 5 pounds Red Potatoes
  • 6 Slices Crispy Cooked Bacon
  • 1 cup Sharp Cheddar Cheese shredded
  • 1/2 cup low sodium vegetable stock/broth

Directions

  1. Pre Heat Oven 425 F
  2. Peeled and cut potatoes into large cubes add into a mixing bowl, add vegetable stock, cut pieces of crispy cooked bacon, stir gently
  3. Transfer to a non stick baking casserole dish
  4. Add cheese and gently stir
  5. Place into the hot oven and bake 20 minutes or until golden brown and potatoes are tender when pierced
