  1. COARSELY chop sufficient roasted bell peppers to equal 1/2 c.. PLACE remaining bell peppers, beans, tofu, parsley, lime juice, extra virgin olive oil, cumin, garlic, jalapenos, and salt in food processor; cover. Process till smooth. Stir in minced bell peppers. Chill for about 1 hour before serving. Serve with pita wedges or possibly tortilla chips.
