Roasted Potatoes with Thyme and Gorgonzola

Ingredients

  • 1/2 Lb. Baby Red Potatoes, Halved
  • 1 1/2 Tsp. Olive Oil
  • 1/2 Tsp. Dried Thyme
  • 1/8 Tsp Salt
  • 1/8 Tsp. Black Pepper
  • 3 Tbsp. Crumbled Gorgonzola Cheese

Directions

  1. In a large bowl, combine the first five ingredients. Place in a greased 15-in. x 10-in. x 1-in. baking pan.
  2. Bake, uncovered, at 425° for 40 minutes or until potatoes are tender, stirring once. Sprinkle with cheese.
