Ingredients

  • 12 sm Yukon Gold new potatoes
  • 2 Tbsp. Extra virgin olive oil
  •     Salt to taste
  • 1/2 tsp Dry thyme, crumbled
  • 2 x Garlic cloves, chopped

Directions

  1. Preheat the oven to 375 F. Place the potatoes in an oven-proof pan with the oil, salt, thyme, and garlic; stir to coat. Cover pan and bake in the oven for 1 hour or possibly till cooked through. Stir several times.
  2. Makes 4 servings.
