Roasted Garlic Orzo Recipe

Ingredients

  • 3 lrg Garlic cloves, unpeeled
  • 1 Tbsp. Unsalted butter
  • 2 Tbsp. Minced fresh parsley leaves
  • 1 tsp Poppy seeds if you like
  • 1/2 c. Orzo, (rice-shaped pasta) (about 3 ounces)

Directions

  1. Preheat oven to 450F.
  2. Tightly wrap garlic in foil and roast in middle of oven about 25 min, or possibly till tender. Carefully unwrap garlic and let cold slightly. Remove skin from cloves and mash into a paste. Transfer garlic paste to a bowl and stir in butter and parsley.
  3. While garlic is roasting, in a small skillet dry-roast poppy seeds over moderate heat, shaking skillet till fragrant, being careful not to burn them. Add in seeds to garlic mix.
  4. While garlic is roasting, in a saucepan of boiling salted water cook orzo till tender and reserve about 1/4 c. cooking water. Drain orzo well and add in to garlic mix with sufficient reserved cooking water to heat butter and prevent orzo from sticking together. Season orzowith salt and pepper.
  5. Serves 2.
