Roasted Garlic Chicken Chili

Ingredients

  • 12 garlic cloves (Roasted)
  • 3 Leeks, cleaned and sliced thin
  • 2 TB Olive Oil
  • 1 jalaleno diced
  • 3 garlic cloves
  • 3 TB flour
  • 1/3 cp + 7 cps. chicken broth
  • 4 cps. diced roasted chicken
  • 1 TB chili powder
  • 1/2 tsp. cayenne
  • 2 15 oz. navy beans
  • salt and pepper
  • 1 box of frozen spinach, drained
  • 1/3 cp. whole milk

Directions

  1. Roast the garlic in the oven on 400 for an hr. the remove from casing. Pulse in a food processor.
  2. Saute leeks, garlic, peppers with the 2 TB of olive oil until carmelized. About 20 min. Add the flour. Stir for 2 min. until brown.
  3. Deglaze the pan with the 1/3 cp. chicken broth for a few minutes and then add the rest of the broth. Add rest of the ingredients. Let cook for 30 minutes
  4. Top with whatever toppings you would like.
