Ingredients
- 2 lbs tomatoes
- 2 carrots
- 1 medium onion
- 3 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 6-8 tablespoons beef broth
- 1/3 cup herbs (I usually do about 1/4 cup basil, 1/2 tablespoon minced rosemary, 1 tablespoon minced oregano)

he%20oven%20for%202-3%20hours,%20until%20everything%20is%20tender%20and%20tomatoes%20appear%20slightly%20shriveled.%20%20(In%20my%20oven%20it%20almost%20always%20takes%202%201/2%20hours).%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20slightly.%20%20Place%20roasted%20vegetables%20in%20a%20food%20processor%20with%20broth.%20%20Open%20garlic%20packet%20and%20squeeze%20all%20cloves%20into%20the%20food%20processor.%20%20Pulse%20several%20times%20and%20then%20add%20fresh%20herbs.%20%20Pulse%20again%20until%20desired%20consistency%20is%20reached.%20%20Season%20with%20salt%20and%20pepper,%20add%20additional%20broth%20for%20consistency.%20%20If%20needed,%20add%20a%20little%20sugar,%20or%20a%20drizzle%20of%20balsamic%20vinegar.%20%20Let%20cool%20completely%20and%20then%20store%20in%20the%20fridge%20for%20a%20few%20days,%20or%20in%20the%20freezer%20for%20several%20months.%20%20%20%20Yields%202-1/2%20cups%20sauce.%3C/p%3E){kind=link}
