Ingredients

  • 1 c. roasted sweet corn
  • 1/2 pt red tear drop tomatoes stemmed, washed,
  •     and sliced in half
  • 1/2 pt yellow teardrop tomatoes stemmed, washed,
  •     and sliced in half
  • 1/2 c. chopped red onions
  • 1 tsp chopped jalapeno peppers
  • 2 Tbsp. minced fresh parsley leaves
  • 1 Tbsp. freshly-squeezed lime juice
  • 1 tsp freshly-squeezed lemon juice
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Combine the corn, tomatoes, onions, jalapenos, parsley, lime juice, and lemon juice. Mix well. Season with salt and pepper. Serve cool or possibly at room temperature.
